1 onion (roughly chopped)
3-4 garlic cloves
1 can chipotle peppers in adobo sauce
8 tablespoons flour
1 cup beef stock
1 cup heavy cream
2 cups American cheese (cubed)
1 cup smoked mozzarella (shredded)
1 cup sharp cheddar (shredded) Salt (to taste)
For the Nachos: Pulled pork (smoked and crisped) Tortilla chips Bacon (cooked and crumbled) Black beans Pickled red onions Sliced jalapeños Sour cream Guacamole

Chipotle Queso Trash Can Nachos
STEP 1
In a pot, melt the butter and sauté the onions and garlic until translucent.
STEP 2
Add chipotle peppers and adobo sauce for smoky flavor. Stir in flour to create a roux. Add beef stock and heavy cream, then bring to a simmer.
STEP 3
Blend the mixture until smooth. Stir in the cheeses (American, smoked mozzarella, sharp cheddar) and mix until creamy. Season with salt to taste.
STEP 4
Spread tortilla chips across a large platter or tray. Add the smoked, crispy pulled pork on top. Sprinkle crumbled bacon, black beans, pickled red onions, and sliced jalapeños over the pork. Drizzle a generous amount of chipotle queso over everything. Continue layering chips, pulled pork, bacon, beans, queso, and toppings until you reach your desired amount.
STEP 5
Add dollops of sour cream and guacamole. Drizzle BBQ sauce over the nachos for added flavor if desired.
