Smoked Garden Salsa

This is such a fun way to step up a garden salsa if you have a smoker. Oil the vegetables, smoke them, blend them! The majority of the time if you’re trying to be simple, the most the vegetables really need is salt, and some form of sugar or sweetener. The salt brings out the flavors and the sweetener helps balance the acid in the tomatoes. You could also easily replace the tomatoes with tomatillos and make a salsa Verde.

Ingredients

8-10 tomatoes, ( we had 5 off the vine and 4 Romas) 

2 red onions, quartered

2 ½ jalapeño, cut in half seeds removed

20 whole peeled garlic cloves

2 tablespoons olive oil

Salt and pepper

1 teaspoon agave nectar

1 head of cilantro chopped

1-2 limes

Step 1

Leave the vine tomatoes on the vine and leave whole.

Step 2

Slice the Roma tomatoes in half.

Step 3

Place the tomatoes, garlic, onion, and jalapeño on a baking sheet. Coat evenly with the olive oil. (During this step you can add additional flavor spices into the mix such as garlic powder, onion powder, oregano, salt and pepper, or your favorite southwest style spice rub.)

Step 4

Smoke the vegetables at 225°F and a medium to high level of smoke depending on your preferences for about 2 hours.

Step 5

After the two hours immediately remove the vegetables and add them to a blender and blend (removing the tomato stems) until the mix is fully homogeneous.

Step 6

Pour into a bowl and allow to cool in the refrigerator.

Step 7

Once cooled, add the lime juice, agave, cilantro, salt, and pepper to taste. Serve with homemade chips or on your favorite taco recipe.
