Ingredients
1 ham steak, smoked or seared cut into small pieces
1 lb fresh collard greens, cut into 2 inch pieces
1 large onion, chopped
2 garlic cloves, minced
3 cups chicken broth
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon Cajun seasoning
1 Tablespoon butter
1 Tablespoon olive oil

Heat oil in large Dutch oven over medium to high heat. Add ham and onion, cook until tender, about 5 minutes. Add garlic and cook until just fragrant. Add collard greens and fry until they start to wilt.

Pour in chicken broth, add salt, pepper and Cajun seasoning then add butter. Reduce heat to low, cover and simmer for about 45 minutes or until greens are tender.
